Recipe - The BEST Homemade Pretzel Bread

The BEST Homemade Pretzel Bread recipe ever. Seriously, once you make this you will never be able to eat store-bought pretzel bread again! It’s dense, soft, chewy, buttery, salty and oh-so-delicious.

Servings 2 loaves (or 8 buns)

Ingredients

2 ¼ tsp yeast
1 cup warm water 105-110 degrees F
2 TBS whole milk
3 TBS brown sugar

4 quarts water
½ cup baking soda
Kosher salt to taste
2 TBS butter melted
1-2 TBS coarse sea salt

Instructions

  1. Combine yeast, water, and brown sugar in the bowl of your standing mixer fitted with the dough hook. Let stand for 5 minutes (until foamy).
  2. While yeast is proofing…melt butter in a microwave-safe bowl. Mix in milk and set aside.
  3. Once yeast is proofed, add milk/butter to yeast mixture and mix on low speed with dough hook until just combined.
  4. Add salt and flour and mix with dough hook until flour is fully incorporated.
  5. Knead in your mixer until the dough forms a slightly tacky, but firm ball, you may need to add a little more flour 1 TBS at a time, but be careful, you want your dough a little tacky but not too sticky to handle.

  7. Preheat oven to 400 degrees F and bring the 4 quarts of water to a boil. When the water is boiling, slowly add the baking soda (Be careful or you will have a baking soda/water explosion)!

Recipe - Fluffy Potato Rolls

Because my life wouldn’t be complete without dinner rolls, I made more for you. This time? The best, fluffiest, most perfect Potato Rolls you’ll ever eat.

Servings: 12 ROLLS

INGREDIENTS:

1 1/4 cups water
3 tablespoons vegetable oil
3 tablespoons granulated sugar
1 1/2 teaspoons salt
1/2 cup potato flakes

3 cups bread flour
2 1/4 teaspoons (1 packet) Active Dry Yeast
1 teaspoon lemon zest, optional
1/2 teaspoon white pepper, optional
2 teaspoons dried minced onions, optional

DIRECTIONS:

  1. Combine yeast, 1 cup flour, potato flakes, sugar, salt, and optional ingredients (if using) in the bowl of a stand mixer fitted with the paddle attachment. (See notes for hand mixer instructions.)
  2. Combine water and oil and heat to 120° to 130°F. It’s best if you can use an instant read thermometer, but I don’t have one. I heat my water to very hot bathwater temperature, about 45-60 seconds in my 1100W microwave.
  3. Pour the liquid ingredients into the mixing bowl with the flour and yeast and mix with the paddle attachment for 4 minutes on medium speed. Change to the dough hook and gradually add remaining flour.  Knead in mixer for 5-7 minutes until smooth and elastic.
