TOFFEE DIP WITH APPLES

Toffee Dip with Apples is the perfect appetizer or snack to take to any party because it is so easy to whip up, and the toffee bits add the perfect flavor!

Ingredients

  • 3/4 cup packed brown sugar
  • 1/2 cup powdered sugar
  • 1 tsp vanilla
  • 8 oz pkg. cream cheese softened
  • 3/4 cup toffee bits

Instructions

  1. Combine the first four ingredients in a bowl and beat with an electric mixer until smooth. Add toffee bits and mix well. Cover and chill for at least an hour before serving. Serve with sliced apples. Enjoy!

RECIPE - EASY EASTER MARSHMALLOW DESSERT

Easter Marshmallow Bark

Easter Marshmallow Bark is one of my favorite Easter desserts! Just 4 ingredients and a few minutes to make this cute and festive Easter treat. Everyone enjoys our Easter Marshmallow Bark!

Ingredients

  • 1 12- oz bag white chocolate chips
  • 3 cups mini rainbow marshmallows
  • about 1/2 TBSP shortening {optional but it really makes the melting process easier!}
  • Easter sprinkles or other fun sprinkles for decor on top!

Instructions

  1. Measure out 3 cups of marshmallows. Line an 8x11 glass dish or a half-sized cookie sheet {like I used!} with parchment paper.
  2. Pour chocolate chips into a glass or ceramic bowl and microwave for 1 minute 30 seconds. Let sit 2 minutes. Gently stir and add another 15-20 seconds if chocolate isn't fully melted.
  3. Add marshmallows and stir to coat.
  4. Transfer chocolatey marshmallows to your prepared pan. Using a rubber scraper, make sure marshmallows extend to the edge of the pan. Press down slightly to make it all somewhat even. Shake on any sprinkles you'd like to decorate the bark with.
  5. Put in the freezer for about 20 minutes, until chocolate is set. You want to use the freezer so that it cools the mixture as quickly as possible- you don't want those marshmallows to melt!
  6. Remove from the freezer and let sit on the counter to return to room temperature. Cut into pieces. If you use a cookie cutter, I suggest using a metal one and spraying the edges with cooking spray prior to cutting.

Recipe - Chai Cake with Cream Cheese Frosting

This Chai Cake is a special treat for chai tea lovers. Packed with fragrant spices and paired with a simple cream cheese frosting.

INGREDIENTS

Chai Tea Milk:
1 1/2 cup milk
1 Tbsp Chai tea leaves 2 tea bags

Chai Cake:

2 1/4 cups all-purpose flour
2 tsps baking powder
3/4 tsp salt
1 1/2 tsp ground cinnamon
1 tsp ground cardamom
1/2 tsp ground allspice
1/4 tsp ground cloves
1 tsp ground ginger
3/4 cup unsalted butter room temperature
1 cup granulated sugar
1/2 cups light brown sugar packed
3 large eggs room temperature
1 tsp vanilla
1 cup Chai tea milk

Cream Cheese Frosting:
8 oz cream cheese full fat, room temperature
1 1/4 cups unsalted butter room temperature
4 cups powdered sugar
1 tsp vanilla

Assembly (optional):
cape gooseberries
whole allspice
whole star anise
whole cloves
whole green cardamom pods

INSTRUCTIONS

Chai Tea Milk:

  1. Bring milk and tea to a boil in a small pot over med-high heat. Turn heat off and steep for 10mins. Strain and measure out 1 cup. Top up with milk if needed.

Recipe - Maple Streusel Pumpkin Cake

Moist, delicious pumpkin cake, layered with maple cinnamon buttercream and crunchy streusel. Perfect for Thanksgiving or any fall celebration!

Ingredients

Pumpkin Cake
3/4 c. unsalted butter room temperature
1 1/2 c. sugar
1/2 tsp. vanilla extract
3 Tbsp. vegetable oil

3 large eggs room temperature, divided
1 large egg white room temperature
2 1/2 c. all purpose flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/8 tsp. ground cloves
1 3/4 c. pumpkin puree

Maple Cinnamon Frosting
1 1/2 c. salted butter room temperature
1 1/2 c. vegetable shortening
12 c. powdered sugar divided
2 tsp. ground cinnamon
1 Tbsp. maple extract
1/4 c. water or milk room temperature

Cinnamon Streusel
3/4 c. all purpose flour
3/4 c. light brown sugar packed
1 1/4 tsp. ground cinnamon
6 Tbsp. salted butter melted

Instructions

  1. Preheat oven to 350 degrees. Line the bottoms of 3 (8 inch) cake pans with parchment paper and grease the sides.
  2. In a large mixing bowl, cream the butter and sugar on medium speed until light in color and fluffy, 3-4 minutes.
  3. Add the vanilla extract and vegetable oil and mix until combined.
  4. Add 2 of the eggs and mix until well combined.
  5. Add the remaining 1 egg to the egg whites and mix until well combined.

Recipe - Kahlua Cake with Mocha Buttercream

This pretty Kahlua Cake is infused with coffee liqueur & espresso, and adorned with billowy mocha buttercream ruffles.

INGREDIENTS

Kahlua Soak:
1/2 cup water
1/2 cup granulated sugar
1 Tbsp espresso powder
1/4 cup Kahlua coffee liqueur


Cake:
2 1/4 cups all-purpose flour
2 tsp baking powder
3/4 tsp salt
3/4 cup unsalted butter room temperature
1 1/2 cup granulated sugar
3 large eggs room temperature
1 Tbsp Kahlua coffee liqueur
1 cup buttermilk room temperature

Mocha Buttercream:
5 large egg whites
1 1/2 cups granulated sugar
2 cups unsalted butter room temperature
3 Tbsp Kahlua coffee liqueur
1 1/2 Tbsp espresso powder not granules
5 oz good quality dark chocolate chopped, melted, cooled

INSTRUCTIONS

Kahlua Soak:

  1. Bring sugar, water, and espresso powder to a boil in a small pot over med-high heat. Simmer for 1min. Remove from heat and stir in Kahlua. Set aside to cool.

Cake:

  1. Preheat oven to 350F. Grease and flour three 6" cake rounds and line with parchment.
  2. In a medium bowl, whisk flour, baking powder, and salt until well combined. Set aside.
