Recipe - Zucchini Turkey Popper Meatballs

A simple recipe that is easy to make ahead of time and is freezer-friendly. Feel free to add your favorite spices and dried herbs. These meatball are tasty as is or you can toss them with your favorite marinara sauce.

YIELD: 12 MEATBALLS (4 SERVINGS)



INGREDIENTS

1 lb. ground turkey
1 cup shredded zucchini (lightly squeezed to remove some of the liquid)
1 tsp. dried Italian Seasoning
½ tsp. garlic powder
½ tsp. onion powder

1/4 tsp. crushed red pepper (omit for AIP)
½ tsp. sea salt
¼ tsp. black pepper (omit for AIP)

INSTRUCTIONS

  1. Pre-heat oven to 400 degrees. Cover a baking sheet with parchment.
  2. Combine all of the ingredients in a bowl and mix with hands.

Recipe - Baked Zucchini Fries

These baked zucchini fries have a buttery flavor and are a fun way to get your vegetables.

INGREDIENTS

1 lb. zucchini squash
1/4 cup all-purpose flour
1/8 tsp salt
1 cup panko bread crumbs
1/4 cup parmesan cheese

1 Tbsp Italian seasoning blend
1 large egg

INSTRUCTIONS

  1. Rinse and dry the zucchini. Cut the ends off and then cut each one into strips, approximately 1/3 inch thick.
  2. Place the zucchini strips on a large zip top bag and add the flour and salt. Shake the bag to coat the zucchini in flour. In a wide, shallow bowl combine the panko bread crumbs, parmesan cheese, and Italian seasoning. Stir to combine. In a second wide, shallow bowl, whisk a raw egg with about 1 Tbsp of water until fairly smooth.

Recipe - Baked Zucchini with Mozzarella

Does your zucchini runneth over in your garden? Or maybe your neighbor’s garden and they are graciously sharing?

If not, you will be hoping it does after giving today’s recipe a try. I don’t like zucchini, at least I thought I didn’t like zucchini, until I gave this recipe for Baked Zucchini with Mozzarella which I originally saw over at Jamie Cooks It Up. a try.



Ingredients

2 medium sized or about 5 small zucchini
Johnny’s Garlic Spread & Seasoning available at at Costco or Sam’s
salt
2 C shredded mozzarella cheese if you don’t have mozzarella use any favorite cheese blend. The pizza blend or Mexican blend works well too Don’t worry about exact proportions. Just sprinkle the cheese on to the thickness you like – the more cheese the better for me!

Instructions

  1. Slice zucchini into 1/2 inch rings.
  2. Place flat onto a large cookie sheet.
  3. Sprinkle with Johnny’s Garlic Seasoning and a bit of salt.
  4. Bake 350 for about 10-15 minutes or until crisp tender.

Ingredients

2 medium zucchini

Ingredients

4 zucchini , halved lengthwise
2/3 cup panko breadcrumbs

Recipe - Parmesan Squash and Zucchini Bake

Parmesan Squash and Zucchini Bake is a perfect recipe for squash and zucchini from the garden. The squash is layered and coated with two kinds of cheese.





Ingredients

4 medium-sized yellow squash and/or zucchini sliced lengthwise and then into 1/4 inch slices (about 8 cups sliced squash)
1 Tbsp olive oil
1 Tbsp minced garlic

Recipe - Zucchini Crust Pizza




This low carb zucchini crust pizza is crispy, delicious and a great way to add more vegetables to your diet.

INGREDIENTS:

2 cups packed freshly shredded raw zucchini
1 large egg
1/4 cup freshly shredded Parmesan cheese
1/8 tsp black pepper
1/4 cup all purpose flour

DIRECTIONS:

  1. Preheat oven to 450F. Line a large baking sheet with parchment paper.
  2. Add zucchini to a large bowl and let sit 10-15 minutes. Drain excess water from zucchini bowl. Using a tea towel or several sturdy paper towels, add in 1/2 cup of zucchini into towel and wring dry. Repeat with remaining zucchini. When you are finished, you should have about 1 cup of zucchini remaining.
  3. Add zucchini, egg, cheese, pepper and flour to a large mixing bowl. Mix until all ingredients are thoroughly combined.
