Recipe - Baked Parmesan Zucchini Fries

Your new favorite way to eat zucchini! These Baked Parmesan Zucchini Fries are loaded with flavor and baked to golden perfection! The perfect way to use up your summer bounty!

Ingredients

2 medium zucchini
1/2 cup all purpose flour (optional)
2 eggs, lightly beaten
1/2 cup Panko bread crumbs
1/4 cup grated Parmesan cheese

1/4 tsp salt
1/4 tsp pepper
1/4 tsp paprika
1/4 tsp garlic powder
1/4 tsp Italian seasoning

Instructions

  1. Preheat the oven to 425F.
  2. Line a baking sheet with foil and spray with cooking spray.
  3. Combine bread crumbs, Parmesan cheese, salt, pepper, paprika, garlic powder and Italian seasoning in a small bowl.
  4. Cut off the ends of the zucchini. Cut the zucchini in half and then cut into 1/2-inch wide stripes or wedges.

Parmesan Crusted Zucchini are easy to make and are one of THE best ways to enjoy zucchini! Crispy and crunchy, the perfect side dish OR snack!

Ingredients

4 zucchini , halved lengthwise
2/3 cup panko breadcrumbs
1/2 cup fresh grated parmesan cheese
¼ cup finely chopped parsley
4 cloves garlic , minced

1/4 cup melted butter
Salt and pepper

Instructions

  1. Preheat oven to 400°F | 200°C. Spray a baking tray or sheet with non stick cooking oil spray Place the zucchini halves, cut side up, on the baking sheet; set aside.
  2. Mix together the breadcrumbs, parmesan cheese, parsley and garlic in a small bowl. Pour in the melted butter; season with ¾ teaspoon salt and ⅓ teaspoon pepper (or to taste). Mix the ingredients together until the breadcrumbs absorb the butter (about 40 seconds).

Parmesan Squash and Zucchini Bake is a perfect recipe for squash and zucchini from the garden. The squash is layered and coated with two kinds of cheese.





Ingredients

4 medium-sized yellow squash and/or zucchini sliced lengthwise and then into 1/4 inch slices (about 8 cups sliced squash)
1 Tbsp olive oil
1 Tbsp minced garlic
1 Tbsp fresh thyme leaves or 1/2 tsp dried thyme
2 to matoes sliced
2 eggs
1/3 cup light sour cream

1 cup crumbled feta not tightly packed
2 T grated parmesan cheese
1 T lemon juice
salt and pepper - to taste

Instructions

  1. Preheat oven to 375 degrees and spray a large casserole dish with nonstick spray.
  2. Slice the squash into 1/4" slices. If they are larger squash, cut them down the middle before slicing.
  3. Heat oil in a large non-stick frying pan.
  4. Add the squash, garlic and thyme.
  5. Saute and stir just until the squash is starting to soften slightly. Don't overcook!
