Recipe - Broccoli Lemon Rice

Easy recipe for lemon flavoured rice with broccoli. Vegan and Gluten free.

Yield : 3 – 4 servings




Ingredients :

Rice : 1 1/2 Cup
Broccoli : 250 grams
Oil : 2 Teaspoon
Cumin seeds : 1/2 Teaspoon
Onion : 1 medium sized (chopped)

Garlic : 4-5 cloves (finely chopped)
Dried Red Chillies : 2 – 3 nos.
Turmeric powder : 1/4 Teaspoon
Salt : to taste
Lemon Juice : 1/4 Cup

Instructions :

  1. First cook rice as per your preferred cooking method. I usually pressure cook rice.
  2. Do all the other preparations. Clean and chop broccoli, chop onions and mince garlic. Keep it ready.
  3. Heat oil in a pan and add cumin seeds. When they sputter, add onions, garlic, dried red chillies and fry till onions turn translucent.
  4. Then add turmeric powder, mix well.

Recipe - Easy Vegetarian Tostadas

These Vegetarian Tostadas are made with simple Mexican ingredients and are perfect for a quick weeknight meal.





INGREDIENTS

Corn tortillas (10 count)
15 oz can refried beans
1/2 tsp chili powder
1/2 tsp ground cumin
1 lime or 1/2 tsp lime juice
2 avocados
10 oz pico de gallo

4 oz sliced black olives
4 oz queso fresco or cotija cheese, crumbled
non-stick cooking spray

INSTRUCTIONS

  1. Preheat oven to 400F. Place tortillas on baking sheet and spray each side with non-stick cooking spray.  Bake tortillas 4 minutes on each side or until edges are slightly curled.  Remove from oven and set aside.
  2. To a small bowl, add refried beans, chili powder, cumin powder, and lime juice. Mix all ingredients together and microwave for 1 1/2 minutes or until beans are warm.

Potatoes are a dinnertime staple for good reason! They are versatile and there are so many ways to prepare them! Au Gratin Potatoes is a family favorite recipe in my home! This side comes together easily and creates a cheesy and creamy dish that is unbelievably yummy!

INGREDIENTS:

2.5 lbs red potatoes
1 onion
3 tablespoons butter
3 tablespoons flour
1 teaspoon dry mustard
2 cups milk
1 cup cheddar cheese
1/2 cup gruyere cheese
salt & pepper to taste

My favorite recipe for Swedish meatballs nuzzled in a simple yet creamy brown gravy! Just like IKEA but only better. It’s so good you’ll wanna slurp it through a straw!

YIELD: 5-7 PEOPLE (MAKES 18-22 MEATBALLS)





INGREDIENTS:

1 small onion, finely chopped
5 tablespoons butter
2 slices of bread (torn into small pieces)
3 tablespoons milk
1 ¼ pound lean ground beef
1 large egg
1 teaspoon salt + ½ teaspoon black pepper
¼ teaspoon ground nutmeg
½ teaspoon EACH ground all spice AND garlic powder
1 tablespoon EACH oil AND worcestershire sauce
2 tablespoons flour
1 ¾ cup beef or chicken broth (low sodium if possible)
½ cup sour cream
2 teaspoons mustard
buttered egg noodles or mashed potatoes for serving

DIRECTIONS:

  1. In a large skillet, heat a tablespoon of butter over medium heat. Add the onions and allow them to soften and become translucent, about 3-5 minutes. Remove to a medium bowl and allow them to cool.
  2. In a small bowl, pour the milk over the bread and press down with a spoon or your fingers so that the bread soaks up all the milk, let sit 5 minutes.
  3. When the onions have cooled, add the ground beef, bread mixture, an egg, salt, pepper, nutmeg, and all spice to the bowl and mix until just combined. Don’t overmix the meat as it will result in tough meatballs. Shape into 18-22 meatballs that are about 1- 1 ¼ inch in diameter.

2-3 c. broccoli florets
1 c. matchstick carrots
1 c. bell pepper chopped
1 zucchini chopped
1 yellow squash chopped
1/2 c. red onion diced

Sauce:
8 Tbsp. Simple Truth butter
6 garlic cloves minced
1/4 c. flour

2 tsp. dried oregano

For cheese layer:

  1. Combine all ingredients in a medium mixing bowl; set aside until ready to use.

For vegetable layer:

  1. Heat 2 Tbsp. olive oil in a large skillet; add veggies and saute until tender-crisp.
