Recipe - Black Forest Cupcakes

This classic dessert recipe delivers a rich, moist chocolate cupcake stuffed with delicious cherry pie filling and topped with homemade vanilla whipped cream. Add a cherry and chopped chocolate to the top to make these cupcakes, truly gourmet.

Ingredients

For the Cupcake
3 ounces semi sweet chocolate , finely chopped
1/3 cup unsweetened cocoa powder
3/4 cup hot water
3/4 cup bread flour
3/4 cup sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 cup + 2 tablespoons canola oil
2 large eggs
2 teaspoons white vinegar
2 teaspoons vanilla extract

For the Filling
1 large can Cherry Pie Filling

For the Topping
1 + 1/2 cups heavy whipping cream , cold
6 tablespoons powdered sugar
1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F. Line muffin tin with 12 cupcake liners and set aside. Heat water in microwave for 1 1/2 minutes. In a small bowl, combine chopped chocolate and cocoa powder and pour hot water over the top. Whisk until smooth and place in refrigerator for 20 minutes or freezer for 10 minutes.
  2. In a small bowl, combine oil, vinegar, eggs and vanilla extract then whisk for about 1 minutes. In a separate medium bowl, combine bread flour, baking soda, salt and sugar then whisk to incorporate well. Once chocolate has cooled, pour chocolate mixture into vinegar and egg mixture and mix. Pour chocolate and egg mixture into dry flour ingredients. Beat on low or whisk batter until it is smooth; about 1-2 minutes.

Recipe - Apple Cinnamon Baked Oatmeal Cups

These Apple Cinnamon Baked Oatmeal Cups are perfect for an easy and healthy breakfast throughout the week!

INGREDIENTS

3 cups (300 grams) old-fashioned rolled oats
1 teaspoon baking powder
1 and ½ teaspoons ground cinnamon
¼ teaspoon salt
1 cup milk (almond or regular dairy milk work well)

2 large eggs
½ cup pure maple syrup
1 teaspoon vanilla extract

Recipe - Homemade English Muffins



Homemade English muffins are fun to make, delicious, and cost just pennies each. Make this your next weekend project!

Servings 12

INGREDIENTS

1 tsp active dry yeast
1 Tbsp sugar, divided
1/2 cup warm water
1/2 cup milk
2 Tbsp butter

3 cups all-purpose flour, divided
3/4 tsp salt
1/4 cup cornmeal

INSTRUCTIONS

  1. Dissolve the yeast and half of the sugar into 1/2 cup warm water in a large bowl, and let it sit for about 5 minutes, or until it has developed a thick foam on top.
  2. While waiting for the yeast, combine the milk, butter, and the rest of the sugar in a measuring cup or microwave safe bowl. Microwave on high for 30 seconds, then stir until the butter is dissolved. Add an additional 10 seconds if needed. You want the milk warm enough to melt the butter, but not scalding.
  3. Once the yeast is foamy, pour the milk and butter mixture into the bowl, along with 1 cup of the flour, and the salt. Stir until the mixture is mostly smooth. Add the second cup of flour, about 1/3 cup at a time, stirring to combine each time. Finally, begin to add the third cup of flour, 1/3 cup at a time, until you can no longer stir it with a spoon. At that point, turn the dough out onto a lightly floured surface and knead for about 5 minutes, dusting with small amounts of flour as you go. Once finished kneading, you should have used 2.5-3 cups flour total.

Recipe - Homemade English Muffins




This Homemade English Muffins Recipe is my new favorite recipe. These English Muffins are filled with nooks and crannies, tasting so much better than store bought.  Homemade English Muffins are not very difficult.  They are much easier than one would expect. In not much time at all you can enjoy fresh made English muffins. Load on the butter, jam, Homemade Nutella, Homemade Apple Butter, eggs , cheese, meat… whatever you like.

Ingredients

6 cup Flour
2 tbsp Sugar
2 1/4 tsp 1 packet Yeast
1 Egg
1/2 tsp Salt
1 cup Milk
1 cup warm Water
3 tbsp softened Butter
Corn Meal

Instructions

  1. Add yeast to warm water and allow to sit.
  2. Warm milk and dissolve sugar in it. Set aside to cool.
  3. Put 3 cups of flour, salt, butter, egg, yeast mix and milk mix and beat until smooth.Add remaining flour 1/2 cup at a time until a soft dough forms.
  4. Knead for 5 minutes in mixer or 10 minutes by hand.
  5. Place dough in a oiled bowl cover and let rise until doubled.
  6. Line 2 cookie sheets with wax paper and dust each with corn meal.
  7. Punch down risen dough; divide into 18 pieces.
