2 tbsp sharp cheddar
1/4 medium avocado, sliced

Dump and Bake Meatball Casserole

Ingredients

  • 1 16 ounce package uncooked rotini pasta
  • 1 25 ounce jar marinara sauce
  • 3 cups water
  • 1 14 ounce package fully-cooked miniature (cocktail-size) meatballs (if using frozen meatballs, make sure that they are completely thawed before using)
  • 2 cups shredded mozzarella or Italian blend cheese
  • Optional: Parmesan cheese and fresh chopped herbs such as basil, oregano, and parsley for garnish

Instructions

  1. Preheat oven to 425 degrees F.
  2. In a large baking dish, stir together uncooked pasta, marinara sauce, water, and meatballs. Cover tightly with aluminum foil and bake for 35 minutes.
  3. Uncover; stir. At this point you should check the pasta to make sure that it is al dente (firm but just about finished cooking). If it’s still too hard, cover the dish and return to the oven until pasta is al dente. Then move on to the next step.
  4. Sprinkle mozzarella over the top and bake uncovered for 5-10 more minutes (or until cheese is melted and pasta is tender).

Apart from the tender scrambled eggs, my favorite thing about these easy homemade breakfast burrito recipe is the seasoned potatoes. You’ll toss the potatoes with a fragrant mix of chili powder, cumin, oregano, and garlic, then roast them until tender.
Along with the potatoes, you’ll roast a jalapeno that will get added to your eggs later. It’s the perfect way to add a little extra heat to your burritos.

Ingredients
For Potatoes:
  • nonstick cooking spray
  • 1 large red potato, cut into 3/4-inch cubes
  • 1/2 large onion, chopped
  • 1 tbsp extra virgin olive oil, plus more for jalapeno
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 1/4 tsp garlic powder
  • salt
  • pepper
  • 1 jalapeno
For Eggs:
  • 8 large eggs
  • 2 tsp extra virgin olive oil
For Burritos:
  • 4 large (10-inch) flour tortillas
  • 1 cup shredded pepper jack cheese
  • salsa or hot sauce, optional
Instructions
Prepare potatoes:
  1. Preheat oven to 425 degrees. Spray a large baking pan with nonstick spray.
  2. In a zip top bag (or medium bowl), combine potato, onion, olive oil, and spices, plus salt and pepper to taste. Mix well.
  3. Spread seasoned potatoes on baking pan in a single layer.
  4. Add jalapeno to baking pan; lightly drizzle with olive oil.
  5. Roast potatoes and jalapeno for 15 minutes.
  6. Remove from oven; flip potatoes and jalapeno, then return to oven.
  7. Bake until potatoes are cooked through, about 10 to 15 minutes more.
  8. Remove from oven; season with additional salt, if desired. Set aside.
Prepare eggs:
  1. Add eggs to a large bowl. Season with salt and pepper, then beat until frothy.
  2. As soon as potatoes are done, heat olive oil in a large skillet over medium heat.
  3. Chop roasted jalapeno, discarding seeds, stem, and any skin that is peeling off.
  4. Add eggs and jalapeno to skillet; cook until eggs are scrambled, stirring frequently. Remove from heat.
Assemble burritos:
  1. Place a tortilla on a large plate; microwave for 10 to 15 seconds, or until warm.
  2. Top tortilla with 1/4 of the eggs, cheese, and potatoes.
  3. Fold tortilla around filling. Repeat process with remaining ingredients to make 4 burritos.
